Yotam Ottolenghi’s Hosting Rules Aren’t Just About What You Cook

The chef and award-winning cookbook writer Yotam Ottolenghi has changed how we all cook today. It’s thanks to him that ingredients like harissa and preserved lemons are common on grocery store shelves, and that we all know the difference a sprinkle of pomegranate seeds makes.

But his best hosting advice is surprisingly little about culinary pyrotechnics. For him, a great dinner is about giving yourself time, lowering the pressure, and creating a table where both you and your guests can relax.

These are the hosting rules he actually lives by.

“I always make sure that, first of all, everything is prepared in advance,” Ottolenghi says. “Really, as much as possible. It’s not that I can’t multitask. I just want to be present. You know, I can cook and chat, but it’s not real chat.”
