Baking from scratch isn’t my favorite thing to do, so any time I can make cookies or a cake with a little help from store bought ingredients, I am totally in! I definitely like a freshly baked cookie though, and these cookies made with Funfetti cake mix are so easy to make and come out super soft and fluffy each time. I like to dip mine in icing at the end and add more sprinkles, but you could leave the icing off and they are still amazing! These are so simple to make, and are perfect for little ones to help with. They are super cute too, and would make great cookies for a baby shower or birthday party.
Funfetti Cookies Recipe with Cake Mix
What You’ll Need:
- 15.25 ounces Funfetti Cake Mix (1 box)
- ¼ cup vegetable oil
- 4 tablespoon butter, melted
- 2 eggs, room temp
- 1 cup vanilla frosting – store bought or homemade
- sprinkles


How to Make Funfetti Cookies with Cake Mix
- Make the Funfetti cookie dough: In a large bowl, mix the cake mix, oil, butter and eggs. Stir with a spoon to combine.
- Scoop the cookie dough: Use a 2 tablespoon scoop or a spoon to scoop and drop the cookies onto a parchment lined cookie sheet.
- Bake: Bake at 350° for 11-12 minutes or until they start to turn golden around the edges. Let them cool before icing.
- Ice the cookies: Melt the icing in 10 second intervals and dip the cookies halfway in the icing, then immediately add sprinkles. Transfer to a cooling rack.

Don’t over mix. This will keep the Funfetti sprinkles in tact and keep your cookies nice and fluffy.
When you can see the edges of the cookies start to turn golden, take them out of the oven and leave them on the cookie sheet for a couple of minutes. The cookies will continue to cook even though they aren’t in the oven.

No. You can leave them as they are fresh out of the oven and they are still sweet and delicious! You can also use different flavored icings on your cookies if you like.

Ingredients
- 1 box Funfetti cake mix
- ¼ cup vegetable oil
- 2 eggs room temperature
- 1 cup vanilla frosting store bought or homemade
- sprinkles Funfetti or other
Instructions

Preheat oven to 350°

Line a cookie sheet with parchment paper.

In a large bow, mix together cake mix, oil, melted butter and eggs with a large spoon. Do not overmix.

Use a 2 tablespoon scoop to drop cookies onto the cookie sheet about 2 inches apart.

Bake for 11-12 minutes or until the edges of the cookie start to turn golden. Allow to cool.

In a microwavable bowl, heat the icing in 10 second intervals until it is melted.

Dip cookies halfway into icing and place on a cooling rack. Immediately add sprinkles and let cool.
